Venison parmesan

This is one of my favorites!!!! Cut venison steaks 1/2" thick. Pound out,flipping back and forth, steaks to 1/4" thickness. Season with salt and pepper (I use a mix of kosher salt(4TBS)--Fresh black pepper(1 1/2 TBS)--Lawry's season salt(1TBS)--Sugar(1TBS)--Cayenne pepper(1tsp) . Blend together well. )

Next, get some flour-itialian bread crumbs- egg wash. I mix a little of the above salt and pepper in each. Flour,egg,and bread all the steak.

Fry up about 6 slices of bacon. Add some extra oil to the bacon grease and fry the steaks untill golden brown.

Cover the bottom of a baking dish with your favorite speg. sauce. Place fried steaks in dish and add some more sauce on top. Bake at 300 deg. for 20 min. Sprinkle with fresh grated parmesan and romano cheese. Bake for 10min longer or untill cheese melts. Serve with speg. and garlic bread.
